Chickpea Farinata with a Honey Mustard Dressing

Ingredients

Farinata

One cup chickpea flour

Two cups water

½ cup olive oil

¼ cup nutritional yeast

salt and pepper

 

Honey Mustard Dressing

1/4 cup water

2 tablespoons Dijon-mustard

1 tablespoon honey

1 tablespoon apple cider vinegar 1 tablespoon lime juice

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt

pinch pepper

1⁄2 cup olive oil

Farinata is a type of thin, unleavened pancake made from chickpea flour. It originated in Genoa and later became a typical food of the Ligurian Sea coast coast.

Farinata

Firstly blend the chickpea four and water until smooth. Leave to sit in a glass bowl covered overnight (or for at least 6 hours) this helps the mixture to naturally ferment which makes it more digestible and gives a natural rise.

When ready blend with the olive oil, nutritional yeast and seasonings.

Pour into a large deep baking tray lined with baking parchment. Then scatter over vegetables for example onions, asparagus, kale or spinach.

Bake at 18c for 45 mins until cooked through.

Serve with leaves tossed in this yummy dressing.

Honey Mustard Dressing

Put all ingredients except olive oil in a blend- er and blend until smooth. While the blender is running, add the olive oil in a slow drizzle, allowing the dressing to emulsify.
